How do you make ice cream cake from scratch? The first step of this ice cream cake recipe is to make the crust. This acts like a shell for the ice cream and gives the cake some structure when its frozen and sliced. The crust uses ground chocolate sandwich cookies, a little bit of melted butter and requires no baking. If you want to create a specific ice cream flavor, you can add herbs such as lavender, coffee beans, or even chocolate into the milk to steep or melt into it. 2 Combine the eggs, sugar, and salt. Add 8 egg yolks, 1 cup (200 g) of sugar, and a pinch of salt to a large bowl. Cut the vanilla pod open lengthways and scrape out the seeds with the back of a knife, then add to the cream and milk. Heat the cream and milk until just below boiling.

After about 20 minutes, you should have a soft ice cream that's ready to firm up in the freezer. Transfer the ice cream to a freezer-safe container (do not store it in the canister).

Add three generous scoops of ice cream to the blender, along with 2 ounces (1/4 cup) of whole milk. Squirt in 1/4 cup of chocolate syrup and add 1 teaspoon of pure vanilla extract.
